The fresh must is frozen and thawed twice, concentrating the sugars and flavours while removing excess water.

This rich, dense juice is then gently fermented, and once it reaches 9–10% alcohol, it is filtered and pasteurised to preserve its natural sweetness and aromatic complexity.

The result is a golden-hued cider with a luscious mouthfeel and deep, lingering notes of roasted apple, caramel, and honey.

'Patxaran' is a traditional liqueur from the Basque Country that has been produced and drunk for centuries. It is produced by soaking sloe berries in distilled anis with coffee beans and vanilla added to flavour it. The result is rich, deep red liqueur that has an intense fruity and aniseed flavour.

When tasting this Barañano vermouth, we aim for you to perceive a very balanced complexity and breadth of aromas, which will force you to delve deeper to detect the aromas and flavours of the macerated botanicals, such as the bitterness of wormwood and gentian, the freshness of citrus, or the nuances of cinnamon or clove.

Made using traditional maceration with pitted sloes to prolong the maceration process without the risk of it taking on a pitted flavor, resulting in a fruitier patxaran.
