White asparagus grows underground, and when it does not receive sunlight, it does not develop chlorophyll, the pigment responsible for the green color of vegetables and in some cases they have violet or pink tones.

Its flavor is very soft, with a slight bitter touch that is sometimes imperceptible.

Its best period is during March and May. The asparagus of Navarra is very precious worldwide, do not miss the opportunity to try fresh asparagus, they have nothing to do with preserves.

To preserve the fresh asparagus adequately and thus ensure that they maintain their qualities, they should be wrapped with a damp cloth and stored in the refrigerator for up to three weeks.

Extraordinary way to eat vegetables enjoying their pleasantly bitter aftertaste.

It is known as the flower of the garden, due to its characteristic shape. The harvest is done by hand in phases; every seven or eight days in spring, and every six days in winter. Once the plant is harvested, individual selection is carried out to ensure the Designation's origin requirements.
