Idiazabal is made from unpasteurised sheep’s milk of the shaggy-haired Latxa sheep high in the mountains. It is one of the most traditional and renowned Basque cheeses. This medium-strong cheese is cured for up to 12 months and has a close texture with tiny holes.
Our Smoked Idiazabal is delicious enjoyed on its own with fresh bread and chutney or our apple jelly with a glass of our Rioja red wine. It also makes the perfect addition to a post-dinner cheese board.
Idiazabal has gained international prestige and fame. It received the Gold Medal at the prestigious World Cheese Awards and it is protected by a ‘Designation of Origin Idiazabal’.
