Therefore, to elaborate 1L of Artajo 10 some 10 kg of olives are necessary. It is recommended to use it raw, to finish dishes, or enjoy it on toast. Each variety has its particular aroma and flavor, so some pairings with other products are suggested.

The tradition of Artajo in the production of olive oil dates back to the 18th century, when in the historic centre of Tudela, Aceite Artajo was produced, starting from the fertile fields of the Ribera of Navarre.
After a parenthesis in production for 50 years in the s. XX, in the year 1998 the olive tradition is recovered, already focused on a modernized and sustainable agriculture, also maintaining the family character from the origins.


Arbequina: Vegetables and preparation of sauces (mayonnaise, aioli, etc.) Arbosana: Citrus and pastries Arróniz: Legumes and game stews. Coupage: Warm salads, mushroom carpaccios and pomegranate. Koroneiki: Citrus, escarole salads and blue fish, like bluefin tuna. Manzanilla Cacereña: White fish, chocolate and asparagus.
