The pigs are fed on acorns, chestnuts and grass and are allowed to roam the Basque mountain to fatten up naturally. The legs are salted and cured for over two years to produce a dark red marbled meat with a melt-in-the-mouth texture that is slightly salty, delicate and aromatic.
The producers of the Urdetxe brand strictly control the breeding of their pigs and make the pork in the shortest time possible to ensure the standard of the whole process.
