A small round of wood-smoked cheese made from unpasteurised sheep’s milk of the shaggy-haired Latxa sheep high in the mountains, Idiazabal is one of the most traditional and renowned Basque cheeses. This medium-strong cheese is cured for up to 12 months and has a close texture with tiny holes.
Our Idiazabal is delicious. It is perfect enjoyed on its own with fresh bread and chutney or our apple jelly with a glass of our 0.0 sulfites organic red wine. It also makes the perfect addition to a post-dinner cheese board.

Idiazabal has gained international prestige and fame. It received the Gold Medal at the prestigious World Cheese Awards and it is protected by a ‘Designation of Origin Idiazabal’.
