Garlic is a plant with a white bulb, round, divided into teeth, with a strong smell. It has been used since antiquity as a condiment and also for medicinal purposes.

This variety is characteristic from Falces, a village in Navarre, where is dedicated a large extension to this crop.

Garlic is sown from November to February and is harvested in June, twenty days before San Juan. Once collected, they are left to dry in the sun and, later, the heads are classified by size and braided (50-100) to keep them longer.
